To cook your lamb cuts you have a few different options, you can either bake in the oven with no lid, hang smoke, or BBQ. I like to simply use garlic cloves with some salt and pepper. Next, cut the meat off the bones into bite size pieces but make sure to set the bones aside ( We will use them later!)
To make broth:
Put lamb bones in a pot, fill with desired amount of water (at least enough to cover bones – up to 2/3’s full). Add 2 Tbsp. of apple cider vinegar and bring to a boil. Once you get to a boil skim off the scum from the top of the water. Once the scum is skimmed, cut in 1/4’s and add 1-2 carrots, 2 celery, 1/2 yellow or white onion, 2-3 garlic cloves and turn the stove down to a slow simmer. You'll want this to simmer for 6-12 hours. Once you are ready for the broth, strain out the veggies and bones. Don’t use these veggies – they will have lost most of their flavor.
To make stew:
Chop up some fresh veggies and sauté with oil in a pan. You can use any veggies your heart desires! And to add more flavor you can cook up some bacon first and use the fat to saute your veggies in. Simply fry up your bacon in a pan then set aside and add your veggies to the bacon fat. YUM!
- Carrots
- Celery
- Root veggies (either rutabaga, parsnips, turnips, or potatoes)
- 2-5 garlic cloves
Once these veggies are browned, set aside, and then sauté the following:
-Onions (I like – pearl onions and shallots)
-Brussel sprouts – cut in ¼’s
- Mushrooms (shitake are the best in this!)
Add all veggies, bacon, and lamb into the broth. Bring to a boil, turn down to a simmer and simmer for 10 -15 mins. Add in salt, pepper, fresh parsley and/or basil to taste. And add in about ¼ - ½ cup of the secret ingredient – homemade apple juice. Simmer for about 5 more minutes.
