Pot Roast

Before we begin lets get that oven preheated to 350 degrees. While that is warming up add 2 tbsp. oil to a large pot, add roast and brown all sides. Remove meat and add onions, carrots, and celery to pot and cook veggies, stir frequently. Once that is done return meat to pot and add tomato paste, beef stock, and water, bring to a boil. Place bay leaves in liquid, cover your pot tightly and bake for 2 hours.  Add potatos and cook an additional 45 minutes. Finally, remove meat and veggies and transfer to oven safe platter. Turn off oven and place platter in oven to keep warm. Add asparagus to pot roast juices and cook about 6 minutes. Once done add to your pot roast platter and add salt & pepper.

What you'll need:
•3-4 lbs. boneless roast – washed & blotted dry with paper towels
•2 Tbsp. olive oil                                                   
•2 c. water
•2 med. onions, peeled & grated                           
•2 c. carrots, peeled & cut into 3” pieces           
•2 c. celery, cleaned & cut into 3” pieces            
•4 lrg. red potatoes, cut into slices
•2 Tbsp. tomato paste
•2 cans beef stock                                                 
•1 lb. asparagus
•2 bay leaves
•salt & pepper to taste
